Dextrins are amorphous carbohydrate of empirical formula (C6H10O5) n. They are obtained by heating starch at about 160 ° C or by acid hydrolysis at about 100 ° C.
Dextrins form in the bread crust during baking, which gives it its color and fragrance. They are found in the form of white powder, yellow or brown. They are more or less soluble in water and give colorless and dextrorotatory solutions.
Yellow dextrins are used as water-soluble glues in remoistable envelope adhesives and paper tubes, in the mining industry as additives in froth flotation, in the foundry industry as green strength additives in sand casting, as printing thickener for batik resist dyeing, and as binders in gouache paint and in the leather industry.
